Vegan & Gluten-free Mint Fudge Brownies
These mint fudge brownies are vegan, gluten-free, dairy-free, simple to make, and absolutely delicious!
Ingredients
For the brownie base:
- ¼ cup coconut oil melted
- ½ cup almond butter
- ½ cup coconut sugar
- 2 flax eggs 2 tablespoon ground flax mixed with 6 tablespoon water
- ½ cup cacao powder unsweetened
- splash of vanilla extract
- ¼ teaspoon baking powder
- ¼ cup almond flour
- 3 drops peppermint extract
For the mint frosting:
- ½ cup vegan butter
- 2 ½ cup powdered sugar
- 1 tablespoon coconut milk
- 3 drops peppermint extract
- optional food coloring
For the chocolate ganache topping:
- ⅓ cup coconut cream
- ⅔ cup non-dairy chocolate chips
Instructions
- Preheat oven to 350°F and line an 8x8 pan with parchment paper.
- In a bowl, mix together the brownie ingredients until well combined. Spread into the prepared pan and bake for 15-17 min. Let cool.
- In a stand mixer, beat the vegan butter until fluffy. Mix in the powdered sugar and coconut milk until you achieve a frosting consistency. Mix in the peppermint extract and optional food coloring.
- Spread the mint frosting onto the brownie layer and place in the fridge to set for about 30 min.
- Melt together the coconut cream and chocolate chips until smooth. Pour the ganache evenly over the mint frosting layer and return to the fridge to set for about 1 hour. Slice and enjoy!
