    These chocolate mint fudge brownies are simply a dream. They have three delicious layers that melt in your mouth! If you love the chocolate + mint combo, you will love these. They have a gooey brownie base followed by a mint frosting and topped with a fudge layer. They're vegan, gluten-free, dairy-free, and simple to make!

    Ingredients

    Here are the ingredients you'll need:

    • coconut oil
    • almond butter
    • coconut sugar
    • flaxseed
    • cacao powder
    • almond flour
    • peppermint extract
    • vegan butter
    • powdered sugar
    • coconut milk
    • non-dairy chocolate chips

    Vegan & Gluten-free Mint Fudge Brownies

    These mint fudge brownies are vegan, gluten-free, dairy-free, simple to make, and absolutely delicious!

    Ingredients
      

    For the brownie base:

    • ¼ cup coconut oil melted
    • ½ cup almond butter
    • ½ cup coconut sugar
    • 2 flax eggs 2 tablespoon ground flax mixed with 6 tablespoon water
    • ½ cup cacao powder unsweetened
    • splash of vanilla extract
    • ¼ teaspoon baking powder
    • ¼ cup almond flour
    • 3 drops peppermint extract

    For the mint frosting:

    • ½ cup vegan butter
    • 2 ½ cup powdered sugar
    • 1 tablespoon coconut milk
    • 3 drops peppermint extract
    • optional food coloring

    For the chocolate ganache topping:

    • ⅓ cup coconut cream
    • ⅔ cup non-dairy chocolate chips

    Instructions
     

    • Preheat oven to 350°F and line an 8x8 pan with parchment paper.
    • In a bowl, mix together the brownie ingredients until well combined. Spread into the prepared pan and bake for 15-17 min. Let cool.
    • In a stand mixer, beat the vegan butter until fluffy. Mix in the powdered sugar and coconut milk until you achieve a frosting consistency. Mix in the peppermint extract and optional food coloring.
    • Spread the mint frosting onto the brownie layer and place in the fridge to set for about 30 min.
    • Melt together the coconut cream and chocolate chips until smooth. Pour the ganache evenly over the mint frosting layer and return to the fridge to set for about 1 hour. Slice and enjoy!
