    Vegan & Gluten-free Protein Cookie Bars

    These protein cookie bars are a soft chocolate chip cookie dream! These are made with chickpeas, but I promise you cannot taste them. These protein cookie bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • chickpeas
    • almond butter
    • maple syrup
    • almond flour
    • non-dairy chocolate chips
    • coconut oil
    • baking soda and powder

    These protein cookie bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 1 15 oz. can of chickpeas rinsed and drained
    • ½ cup smooth almond butter natural
    • ⅓ cup maple syrup
    • 2 tablespoon melted coconut oil
    • 3 tablespoon almond flour
    • ¼ teaspoon baking powder
    • ¼ teaspoon baking soda
    • ½ cup non-dairy chocolate chips
    • pinch of salt
    • splash of vanilla extract

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper and set aside.
    2. In a food processor, blend together the chickpeas, almond butter, coconut oil, maple syrup, and vanilla until well combined. Mix in the almond flour, baking powder, and baking soda. Fold in the chocolate chips.
    3. Spread the batter into the prepared pan bake for about 23-25 minutes. Let cool before slicing and enjoying!
