These cinnamon roll pie cookies are a fun combo of cinnamon rolls and buttery pie crust...in cookie form! You can use any pie crust/dough you'd like (or if you have leftover pie dough, this is a great use of it!), but I used gluten-free pie dough I found at Target. These are super simple to make, gluten-free, dairy-free, and so so yummy!

Gluten-free & Dairy-free Cinnamon Roll Pie Cookies
These cinnamon roll pie cookies are made with pie dough and are gluten-free, dairy-free, and so so tasty!
Ingredients
- 1 package gluten-free pie dough I used a 16oz package.
- 3 tablespoon vegan butter melted
- ¼ cup +1 tablespoon brown sugar can sub coconut sugar
- 1 tablespoon granulated sugar
- 1 tablespoon cinnamon
For the Icing:
- ⅓ cup powdered sugar
- 1-2 teaspoon water to thin
Instructions
- Preheat oven to 375℉ and line 2 baking sheets with parchment paper.
- On a large piece of parchment paper, begin rolling out your pie dough to about ¼ inch thickness.
- Brush the dough with melted butter. Mix together the cinnamon and sugars. Sprinkle this mixture evenly over the butter.
- Begin rolling the dough as you would a cinnamon roll until you have a large, long log shape. Begin slicing the shape into about 10 cookies.
- Take each slice and gently flatten them into more of a cookie shape. Place the cookies about 1-2 inches apart on the prepared baking sheets.
- Bake for about 20 minutes, or until golden brown at the edges. Mix together your icing.
- Drizzle the icing over your cookies and enjoy!
