    I used to be the BIGGEST Cosmic Brownie lover while growing up...and I honestly probably still would be if I could eat them! I have a Homemade Cosmic Brownie recipe on my site already, but I thought it would be fun to make a cookie version. These are paleo-friendly, gluten-free, dairy-free, simple to make, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • cacao powder
    • coconut oil
    • eggs
    • coconut sugar
    • coconut flour
    • coconut oil
    • baking powder
    • vanilla extract
    • chocolate frosting of choice

    Gluten-free & Dairy-free Cosmic Brownie Cookies

    These cosmic brownie cookies are gluten-free, dairy-free, simple to make, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 1 egg
    • 1 egg yolk
    • ¼ cup coconut oil melted
    • 1 teaspoon vanilla extract
    • ½ cup coconut sugar
    • ½ cup cacao powder
    • ½ cup almond flour
    • 2 tablespoon coconut flour
    • ½ teaspoon baking powder
    • ⅓ cup chocolate frosting of choice!
    • optional sprinkles
    For a paleo-friendly chocolate frosting:
    • ⅓ cup non-dairy chocolate chips melted
    • 2 tablespoon coconut cream

    Method
     

    1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
    2. In a bowl combine the eggs, coconut oil, vanilla extract, and coconut sugar until smooth. Mix in your dry ingredients until you have a dough.
    3. Begin scooping the dough into balls about 1 ½ tablespoon in size and lightly flatten onto the prepared baking sheets. Bake for about 8 min. Let cool before adding your frosting and enjoying!
