    Paleo & Vegan Homemade Cosmic Brownies

    These cosmic brownies are a delicious copycat of the Little Debbie's classic treat! They're made with better ingredients that are paleo, vegan, gluten-free, and dairy free. The most fudgy and delectable brownies ever!

    Ingredients

    Here are the ingredients you'll need:

    • coconut oil
    • nut or seed butter
    • coconut sugar
    • flax eggs
    • cacao powder
    • vanilla
    • baking powder
    • almond flour
    • optional sprinkles
    • coconut cream
    • nondairy chocolate chips

    Storage

    Store these in the fridge for up to 4 days then transfer to the freezer.

    These homemade cosmic brownies taste just as delicious as the childhood classic while also being paleo, vegan, gluten-free, & dairy-free!

    Ingredients Method

    Ingredients
      

    • ¼ cup coconut oil melted
    • ½ cup smooth nut or seed butter I used almond butter!
    • ½ cup coconut sugar
    • 2 flax eggs
    • ½ cup cacao powder unsweetened
    • splash of vanilla extract
    • ¼ teaspoon baking powder
    • ¼ teaspoon salt
    • ¼ cup almond flour
    • optional sprinkles
    For the fudge frosting:
    • ⅓ cup coconut cream
    • ⅔ cup nondairy chocolate chips

    Method
     

    1. Preheat oven to 350°F and line an 8x8 pan with parchment paper. Mix together all of the brownie ingredients until well combined. Spread batter into prepared pan and bake for 15-17 min. Allow brownies to cool for at least 45 min. before adding the frosting.
    2. To make the frosting, heat the coconut cream and chocolate chips in a saucepan over low heat until completely melted and combined. Pour the frosting over the cooled brownies and add sprinkles. Place pan in the freezer to set for a few hours. Slice and enjoy!

      Is there a sub for almond flour ? I have an almond allergy.

      Could regular sugar be used instead of coconut sugar?
