    These cranberry blondies are so soft and melt in your mouth. They have the most delicious almond flavor that pairs perfectly with the cranberries! They're paleo-friendly, gluten-free, dairy-free, and simply delicious!

    Ingredients

    Here are the ingredients you'll need:

    • bananas
    • coconut oil
    • vanilla & almond extracts
    • egg
    • almond flour
    • monkfruit sweetener (or sugar if not strictly paleo!)
    • baking soda
    • baking powder
    • dried cranberries
    • white or dark chocolate chips

    Ingredients
      

    • ¼ cup mashed banana
    • ¼ cup coconut oil melted
    • 1 teaspoon vanilla extract
    • ½ teaspoon almond extract
    • 1 egg
    • 1 ⅔ cup almond flour
    • ⅓ cup +1 tablespoon sugar *see notes for paleo
    • ¼ teaspoon baking soda
    • ½ teaspoon baking powder
    • pinch of salt
    • ¼ cup dried cranberries
    • ¼ cup white chocolate **see notes for paleo

    Instructions
     

    • Preheat oven to 350°F and line a 8x8 pan with parchment paper.
    • In a bowl, mix together all wet ingredients until smooth. Mix in the dry ingredients until well combined. Fold in the cranberries and chocolate chips.
    • Spread the mixture into the prepared pan and bake for 20-22 minutes. Let cool completely before slicing and enjoying!

    Notes

    *I used a granulated monkfruit sweetener to keep these paleo!
    **Use paleo-friendly white chocolate chips or sub dark chocolate chips for paleo!
