Ingredients
Here are the ingredients you'll need:
- bananas
- coconut oil
- vanilla & almond extracts
- egg
- almond flour
- monkfruit sweetener (or sugar if not strictly paleo!)
- baking soda
- baking powder
- dried cranberries
- white or dark chocolate chips

Gluten-free & Dairy-free Cranberry Blondies
These cranberry blondies are so soft and delicious! They're paleo-friendly, gluten-free, dairy-free, and simple to make!
Ingredients
- ¼ cup mashed banana
- ¼ cup coconut oil melted
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- 1 egg
- 1 ⅔ cup almond flour
- ⅓ cup +1 tablespoon sugar *see notes for paleo
- ¼ teaspoon baking soda
- ½ teaspoon baking powder
- pinch of salt
- ¼ cup dried cranberries
- ¼ cup white chocolate **see notes for paleo
Instructions
- Preheat oven to 350°F and line a 8x8 pan with parchment paper.
- In a bowl, mix together all wet ingredients until smooth. Mix in the dry ingredients until well combined. Fold in the cranberries and chocolate chips.
- Spread the mixture into the prepared pan and bake for 20-22 minutes. Let cool completely before slicing and enjoying!
Notes
*I used a granulated monkfruit sweetener to keep these paleo!
**Use paleo-friendly white chocolate chips or sub dark chocolate chips for paleo!
