Chocolate Peanut Butter Buckwheat Pudding
This chocolate peanut butter buckwheat pudding is simple the best texture and so tasty! It is vegan, gluten-free, dairy-free, refined sugar-free, and tastes delicious!
Ingredients
- 1 ripe banana
- ¼ cup peanut butter make sure to use a natural and runny peanut butter!
- 1 tablespoon date syrup
- ½ cup buckwheat groats soaked for at least 12 hours before draining and rinsing
- ¼ cup chocolate protein powder
- 1 teaspoon vanilla extract
- 1 tablespoon cacao powder unsweetened
- pinch of salt
Instructions
- Soak your buckwheat groats in water for at least 12 hours and then rinse and drain.
- Add the buckwheat groats, banana, peanut butter, and date syrup to a food processor and blend until well combined. The buckwheat may still be lumpy but you should have a pretty smooth texture.
- Add in the rest of the ingredients and blend until well combined. Place in the fridge to set for about 30 min. Enjoy! I like to top mine with more peanut butter and chocolate chips!
