These protein pb cereal bars are the most delicious combination of peanut butter, chocolate, and cereal! They're made with only a few ingredients and are a great protein treat. They're vegan, gluten-free, dairy-free, refined sugar-free, and so tasty!

- protein powder of choice
- maple syrup
- cereal of choice
- non-dairy chocolate chips
- coconut oil

Protein Pb Cereal Bars
These protein pb cereal bars are vegan, gluten-free, dairy-free, refined sugar-free, simple to make, and absolutely delicious!
Ingredients
- 1 ¼ cup natural, smooth peanut butter
- ¼-1/2 cup vanilla protein powder *see notes
- ¼ cup maple syrup
- 1 ¼ cup cereal of choice **see notes
- ⅓ cup non-dairy chocolate chips
- ½ teaspoon coconut oil
Instructions
- Line an 8x8 pan with parchment paper and set aside. In a large bowl, mix together the peanut butter and maple syrup until smooth.
- Mix in the protein powder. Fold in the cereal. Press the mixture evenly into the prepared pan and set in the fridge to set for at least 1 hour.
- Slice into bars. Melt together the chocolate chips and coconut oil until smooth. Spread some chocolate on top of each bar and let harden before enjoying!
Notes
*You will need to adjust how much protein powder you use depending on the type of protein powder! Some will be more absorbent, so I recommend starting with less and adding more until you have a texture you like.
**I used a gluten-free and refined sugar-free cereal. Some of my favorites are Three Wishes cereal and Forager cereal.
