    Prep Time 10 minutes mins
    Servings: 12 bars
    Course: Dessert, Snack
    Cuisine: American
    Ingredients Method Notes

    Ingredients

    • 1 ¼ cup natural, smooth peanut butter
    • ¼-1/2 cup vanilla protein powder *see notes
    • ¼ cup maple syrup
    • 1 ¼ cup cereal of choice **see notes
    • ⅓ cup non-dairy chocolate chips
    • ½ teaspoon coconut oil

    Method

    1. Line an 8x8 pan with parchment paper and set aside. In a large bowl, mix together the peanut butter and maple syrup until smooth.
    2. Mix in the protein powder. Fold in the cereal. Press the mixture evenly into the prepared pan and set in the fridge to set for at least 1 hour.
    3. Slice into bars. Melt together the chocolate chips and coconut oil until smooth. Spread some chocolate on top of each bar and let harden before enjoying!

    Notes

*You will need to adjust how much protein powder you use depending on the type of protein powder! Some will be more absorbent, so I recommend starting with less and adding more until you have a texture you like.
**I used a gluten-free and refined sugar-free cereal. Some of my favorites are Three Wishes cereal and Forager cereal.
