These fluffernutter bars are the dreamiest combo of peanut butter and marshmallow! They have an ooey gooey peanut butter cookie base topped with some toasted marshmallow fluff. They're gluten-free, dairy-free, and so simple to make!

- almond flour
- baking powder
- coconut sugar
- eggs
- vanilla extract
- marshmallow fluff of choice

Gluten-free & Dairy-free Fluffernutter Bars
These fluffernutter bars are the most delicious combination of peanut butter and marshmallow! They're gluten-free, dairy-free, and simple to make!
Ingredients
- 1 ½ cup almond flour
- ¾ cup peanut butter *be sure to use natural, runny peanut butter!
- 2 teaspoon baking powder
- ½ cup coconut sugar
- 2 eggs
- 1 teaspoon vanilla extract
- pinch of salt
- ½ cup marshmallow fluff of choice!
Instructions
- Preheat oven to 350°F and line an 8x8 pan with parchment paper.
- In a bowl, mix together the peanut butter, eggs, vanilla, and coconut sugar until well combined.
- Mix in the dry ingredients until you have a sticky dough. Press into the prepared pan and bake for about 15 minutes. Allow to cool.
- Slice the base into 9-12 bars. Spread about 1-3 tablespoon of marshmallow fluff (depending on how much you want on each cookie bar!) onto each bar and use a baking blow torch to "toast" the marshmallow fluff before enjoying!
