    Paleo & Vegan Berry Coconut Cups

    These berry coconut cups are the perfect refreshing treat! They are made with simple, healthy ingredients and I promise you will love them. These cups are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • coconut cream
    • coconut oil
    • coconut flour
    • berries, fresh or frozen
    • honey or maple syrup for vegan

    Paleo & Vegan Berry Coconut Cups

    These berry coconut cups are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients Method

    Ingredients
      

    • ⅔ cup coconut cream
    • 3 tablespoon coconut oil melted
    • 3 tablespoon coconut flour
    • ⅔ cup berries I use frozen & thaw them so there's some extra juice, but you can use fresh
    • 1-2 tablespoon honey (can sub maple syrup for vegan) adjust depending on how sweet you want them!

    Method
     

    1. Line 7 muffin molds with liners. In a bowl, mix together the coconut cream, coconut oil, and coconut flour until smooth. Set aside to sit for about 10 minutes to allow the coconut flour to absorb some of the moisture.
    2. If using frozen berries, thaw them and mashed a bit - you can leave them as chunky or pureed as you'd like. If using fresh, mash slightly.
    3. Fold the mashed berries into the coconut mixture. Begin spooning about 2 tablespoon of the batter into the prepared muffin molds. Place in the freezer to set for about 2 hours. Enjoy!
