These peanut butter banana oat bars are one of my most favorite desserts to make lately! They are so ooey gooey and honestly so addicting (in the best way possible). They are gluten-free, dairy-free, so easy to make, and absolutely delicious!

    Servings: 12 bars
    Course: Dessert, Snack
    Cuisine: American
    Ingredients Method

    Ingredients

    • ½ cup peanut butter smooth, natural
    • 2 eggs
    • ½ cup non-dairy butter melted
    • 1 mashed banana
    • 1 ¾ cup almond flour
    • ½ cup gluten-free oats
    • ¾ cup coconut sugar can sub any granulated sugar or sugar substitute
    • 1 ½ teaspoon baking powder
    • splash of vanilla extract
    • pinch of salt
    • ½ cup non-dairy chocolate chips

    Method

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a bowl, combine the peanut butter, mashed banana, butter, eggs, vanilla, and sugar until smooth.
    3. Mix in the almond flour, baking powder, salt, and oats until well combined. Fold in the chocolate chips.
    4. Spread the batter into the prepared pan and bake for 20-23 minutes. I like mine on the gooey side, so I only bake them for 20 minutes! Let cool completely before slicing and enjoying!
