Gluten-free & Dairy-free PB Banana Oat Bars
These peanut butter banana oat bars are gluten-free, dairy-free, simple to make, and absolutely delicious!
Ingredients
- ½ cup peanut butter smooth, natural
- 2 eggs
- ½ cup non-dairy butter melted
- 1 mashed banana
- 1 ¾ cup almond flour
- ½ cup gluten-free oats
- ¾ cup coconut sugar can sub any granulated sugar or sugar substitute
- 1 ½ teaspoon baking powder
- splash of vanilla extract
- pinch of salt
- ½ cup non-dairy chocolate chips
Instructions
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl, combine the peanut butter, mashed banana, butter, eggs, vanilla, and sugar until smooth.
- Mix in the almond flour, baking powder, salt, and oats until well combined. Fold in the chocolate chips.
- Spread the batter into the prepared pan and bake for 20-23 minutes. I like mine on the gooey side, so I only bake them for 20 minutes! Let cool completely before slicing and enjoying!
