These chocolate sugar cookie bars are a delicious chocolate version of my GF & DF Sugar Cookie Bars that you all love! They are so simple to make and so so soft. I'm convinced there's nothing better than a soft sugar cookie that melts in your mouth. These are gluten-free, dairy-free, easy to make, and absolutely tasty!
Ingredients

- gluten-free flour (I used King Arthur brand)
- non-dairy butter
- egg
- vanilla extract
- cacao powder
- sugar
- baking powder
- optional sprinkles

Gluten-free & Dairy-free Chocolate Sugar Cookie Bars
These chocolate sugar cookie bars are gluten-free, dairy-free, easy to make, and absolutely delicious!
Ingredients
For the cookie base:
- 1 cup gluten-free flour
- ¼ cup +2 tablespoon cacao powder unsweetened
- ¼+1/8 teaspoon xanthum gum only if your flour does not already have it!
- ⅔ cup sugar
- 2 teaspoon vanilla extract
- 1 egg
- ½ cup nondairy butter
- ½ teaspoon salt
- ¼ teaspoon baking powder
For the frosting:
- ½ cup nondairy butter
- 2 cup powdered sugar
- ½ teaspoon vanilla extract
- 1-2 tablespoon nondairy milk as needed, to thin
Instructions
- Preheat oven to 350℉ and line an 8x8 baking pan with parchment paper.
- Cream together the nondairy butter and sugar until light and fluffy. Mix in the egg and vanilla extract until combined.
- Add in all dry ingredients until well combined. Press the dough into the prepared pan and bake for about 14-16 minutes. (This will vary based on your oven as well as how gooey you want them! I bake for 14 minutes.) Let cool while you make the frosting.
- In a stand mixer, whisk the butter until whipped. Mix in the powdered sugar ½ cup at a time until you get your desired consistency. Add in the vanilla. Add your milk 1 tablespoon at a time until you have a consistency you like.
- Spread the frosting evenly onto the cookie base, slice, and enjoy!
