Gluten-free & Dairy-free S'mores Baked Oats

These baked oats are so simple to make and are the perfect summer bonfire flavor!

Ingredients
  

  • 3 cups gluten-free rolled oats
  • 2 teaspoon baking powder
  • ½ teaspoon ground nutmeg
  • 1 ½ teaspoon molasses
  • 2 eggs sub flax eggs for vegan!
  • 1 cup nondairy milk
  • 2 tablespoon coconut oil melted
  • ¼ cup maple syrup
  • ¼ cup coconut sugar
  • 1 teaspoon vanilla extract
  • ½ cup marshmallows sub vegan marshmallows for vegan
  • ¾ cup nondairy chocolate chips

Instructions
 

  • Preheat oven to 350°F and line an 8x8 baking pan with parchment paper. In a large bowl mix together all ingredients except for the chocolate chips and marshmallows.
  • Fold in the chocolate chips and marshmallows. Pour into prepared pan and top with additional marshmallows.
  • Bake for about 20 min. Broil for about 1 min. to get the marshmallows toasty on top. Let cool before slicing and enjoying!
