    These strawberry cookie bars have the dreamiest texture and flavor! Something about strawberry desserts has my heart lately. These strawberry cookie bars are gluten-free, dairy-free, simple to make, and absolutely delicious!

    Ingredients

    • non-dairy butter
    • egg
    • vanilla & almond extract
    • agave or maple syrup
    • almond flour
    • coconut flour
    • sugar
    • tapioca flour
    • baking powder
    • freeze dried strawberries

    Ingredients Method

    Ingredients
      

    • ½ cup non-dairy butter softened
    • 1 egg
    • ¼ teaspoon almond extract
    • 1 teaspoon vanilla extract
    • 3 tablespoon agave can sub maple syrup
    • ¼ cup sugar
    • 2 cup almond flour
    • 2 ½ tablespoon coconut flour
    • 1 tablespoon tapioca flour
    • ½ teaspoon baking powder
    • ¾ cup freeze dried strawberries crushed
    For the Frosting:
    • ¼ cup non-dairy butter softened
    • 2-3 cup powdered sugar
    • 1 teaspoon vanilla extract
    • ½-1 tablespoon non-dairy milk to thin
    • ¼ cup freeze dried strawberries crushed

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a bowl using a hand mixer or a stand mixer, whip the butter and sugar until fluffy. Mix in the egg, extracts, and agave until smooth.
    3. Mix in the baking powder, almond flour, coconut flour, and tapioca flour until you have a dough. Fold in the freeze dried strawberries.
    4. Press the cookie dough into the prepared pan and bake for about 15-20 minutes, depending on how soft you want them.
    5. In the meantime, make the buttercream. Whip the butter until fluffy. Slowly incorporate the powdered sugar until you have a texture you like. Add in the vanilla extract and optional milk to thin. Once you have a frosting consistently you like, fold in the strawberries.
    6. Spread the frosting evenly over the baked cookie bars, slice, and enjoy!
