- maple syrup
- coconut oil
- non-dairy milk

Paleo Carrot Cake Waffles
These carrot cake waffles are paleo, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
- 1 cup almond flour
- ½ cup coconut flour
- ½ cup tapioca flour
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 4 eggs
- ¼ cup maple syrup
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- ¼ cup + 2 tablespoon non-dairy milk
- 1 cup shredded carrots
For the Icing Drizzle:
- ¼ cup coconut butter melted
- 1 teaspoon maple syrup
Instructions
- Preheat your waffle maker of choice while you mix up the batter for the waffles.
- In a large bowl, mix together all of the wet ingredients until smooth. Mix in the dry ingredients (except for the carrots) until you have a batter.
- Fold in the shredded carrots. Begin scooping the batter into the waffle maker and cooking them according to your waffle maker. The number of waffles will vary on your size of waffle maker!
- Let the waffles cool while you melt the coconut butter and mix it with maple syrup. Drizzle over the waffles and enjoy!
