When I think of summer flavors, I always think of all things lemon! It's no secret that I love making paleo donut holes, so I had to make a light and summery flavor. These donut holes are simple to make, paleo, gluten-free, dairy-free, refined sugar-free, and so so tasty!
Ingredients
Here are the ingredients you'll need:
- lemon
- almond flour
- coconut flour
- tapioca flour
- egg
- honey
- lemon juice
- coconut oil

Paleo Lemon Donut Holes
These lemon donut holes are paleo, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
- ½ cup almond flour
- 5 tablespoon coconut flour
- ¼ cup tapioca flour
- 1 egg
- 2 tablespoon honey
- 2 tablespoon lemon juice
- ¼ cup coconut oil melted
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- zest of ½ lemon
For a paleo-friendly glaze:
- ¼ cup coconut butter melted
- 3 tablespoon maple syrup
For a regular glaze (not paleo!):
- ½ cup powdered sugar
- water to thin
Instructions
- Preheat oven to 400℉ and line a baking sheet with parchment paper.
- In a bowl, mix together all of the donut hole ingredients until you have a dough. Fold in lemon zest. Let the dough sit for about 10 minutes to allow the coconut flour to absorb excess moisture.
- Roll your dough into bite-size balls and place on your baking sheet. Bake for about 6-8 minutes and let cool.
- Mix together your glaze of choice and dip each donut hole until completely coated. Top with optional additional lemon zest. Let harden and enjoy!
