    Paleo Lemon Donut Holes

    When I think of summer flavors, I always think of all things lemon! It's no secret that I love making paleo donut holes, so I had to make a light and summery flavor. These donut holes are simple to make, paleo, gluten-free, dairy-free, refined sugar-free, and so so tasty!

    Ingredients

    Here are the ingredients you'll need:

    • lemon
    • almond flour
    • coconut flour
    • tapioca flour
    • egg
    • honey
    • lemon juice
    • coconut oil

    Paleo Lemon Donut Holes

    These lemon donut holes are paleo, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • ½ cup almond flour
    • 5 tablespoon coconut flour
    • ¼ cup tapioca flour
    • 1 egg
    • 2 tablespoon honey
    • 2 tablespoon lemon juice
    • ¼ cup coconut oil melted
    • ¼ teaspoon baking powder
    • ¼ teaspoon baking soda
    • zest of ½ lemon
    For a paleo-friendly glaze:
    • ¼ cup coconut butter melted
    • 3 tablespoon maple syrup
    For a regular glaze (not paleo!):
    • ½ cup powdered sugar
    • water to thin

    Method
     

    1. Preheat oven to 400℉ and line a baking sheet with parchment paper.
    2. In a bowl, mix together all of the donut hole ingredients until you have a dough. Fold in lemon zest. Let the dough sit for about 10 minutes to allow the coconut flour to absorb excess moisture.
    3. Roll your dough into bite-size balls and place on your baking sheet. Bake for about 6-8 minutes and let cool.
    4. Mix together your glaze of choice and dip each donut hole until completely coated. Top with optional additional lemon zest. Let harden and enjoy!

        Hi C! I have not tried anything instead of the coconut butter in this recipe, I'm sorry!
