These pumpkin spice latte bars are a fun dessert version of the fall favorite-a pumpkin spice latte! They have the delicious espresso flavor and all the sweetness of a pumpkin treat. They're paleo, gluten-free, dairy-free, and delicious!
Ingredients
Here are the ingredients you'll need:
- pumpkin puree
- coconut oil
- egg
- vanilla
- almond flour
- baking soda
- pumpkin pie spice
- cinnamon
- espresso powder
- coconut sugar
- coconut milk
- maple syrup

Paleo Pumpkin Spice Latte Bars
These pumpkin spice latter bars are a delicious fall treat that is paleo, gluten-free, & dairy-free!
Ingredients
For the bars:
- ½ cup pumpkin puree
- ½ cup coconut oil softened
- 1 egg
- splash of vanilla extract
- 1 ½ cup almond flour
- ½ teaspoon baking soda
- 1 tablespoon +1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 3 ½ tablespoon espresso powder
- pinch of salt
- ½ cup sugar*
- ¼ cup brown sugar*
For the coconut frosting:
- 1 can coconut milk only use the thick part
- 2 tablespoon maple syrup
- splash of vanilla extract
- ½ teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ cup powdered sugar OPTIONAL if you want it sweeter (powdered sugar is not paleo)
Instructions
- Preheat oven to 350°F and line an 8x8 pan with parchment paper. Using a hand mixer, mix together all of the bar ingredients until well combined.
- Spread into the prepared pan and bake for 23-25 min. Let cool. While those are cooling, make the frosting.
- Using a mixer, whip the coconut frosting ingredients until fluffy. Spread over the bars, slice, and enjoy!
Notes
*sub all coconut sugar (¾ cup) for paleo
