One of the foods I found myself missing the most when embarking on my gut-healing journey was good ol’ bread. I would just crave a simple, plain piece of bread that I could eat as-is or toasted. I finally found this bread that does the trick! Perfect to slather on some nut butter for a quick snack or pop in the toaster and enjoy with some avocado or ghee. I make extra loaves of this to store in the freezer so I always have some on hand!
Growing up I took PB&J sandwiches to school for lunch every. single. day. I never got sick of them and I don't think I ever will! There is something so nostalgic about this classic sandwich and I love it. It kind of makes me feel like a kid again and who doesn't love that?! My mom used to always make me these on whole grain wheat bread but now as my body doesn't tolerate wheat too well, I use this bread as a replacement. I still get to enjoy that satisfying and classic sandwich combo, just in a little bit of a different way.

People seem to think that if you eat paleo or grain-free that you cannot enjoy bread but this is so false! This yummy bread is paleo, grain free, and absolutely perfect. It even has the added benefits of the flax meal. I also like to add chia seeds to pack it with even more nutrients but that is totally up to you! Enjoy this as a delish sammie or toast it and add your favorite toppings, either way you will not be disappointed!

Ingredients
Dry Ingredients:
- 1 cup almond flour
- ¾ cup arrowroot flour
- ½ cup flax meal
- ½ teaspoon sea salt
- 2 teaspoon baking powder paleo
- 2 tablespoon chia seeds optional
Wet Ingredients:
- 2 tablespoon coconut oil
- 4 whole eggs
- ¼ cup water
- 2 tablespoon almond milk or any nut milk of choice
- 1 teaspoon apple cider vinegar
Instructions
- Preheat oven to 350°F a line a loaf pan with parchment paper.
- In a blender (or food processor), combine all of the dry and wet ingredients until thoroughly mixed.
- Pour batter into prepared pan and bake for 45 minutes. Enjoy!
