My all time favorite girl scout cookie is the Samoa. Just SO GOOD. However, I haven't had them in years due to my restricted diet. I thought the days of enjoying a yummy treat, like a Samoa, were gone, but this recipe saved the day! Not only are they absolutely delicious, but also paleo, grain-free, gluten-free, vegan, and refined sugar-free!
Sweet treats like this are a part of life that I think should be enjoyed no matter what medical or health restrictions you may face. There are always alternatives and ways to be creative and create a treat you (and your body!) will enjoy.
When I made these delicious lil' guys the first time, even my family, who prefers the real deal, LOVED them. That is saying something! I highly recommend you run, not walk, to the kitchen to whip up a batch of these!
Paleo Samoa Bars
Ingredients
For the Crust:
- ⅔ cup coconut flour
- pinch of salt
- 2 ½ tablespoon maple syrup
- ⅓ cup coconut oil solid
- 6 tablespoon water
For the Filling:
- ½ cup creamy almond butter
- ⅓ cup maple syrup
- pinch of salt
- 1 teaspoon vanilla extract
- ¾ cup dark chocolate dairy free
- ⅓ cup coconut oil
- ¾ cup shredded coconut unsweetened
Instructions
For the Crust:
- Preheat oven to 350°F and line an 8x8" square pan with parchment paper and grease the inside edges.
- In a bowl, combine the coconut flour and salt. Add the maple syrup, coconut oil, and water until well combined. If the mixture is still too crumbly, add water, a tablespoon at a time, until a dough forms.
- In the prepared pan, press the dough into an even layer and bake for approximately 16-17 minutes or until the edges are golden. Set aside to cool.
For the Filling:
- In a small saucepan, combine the almond butter, maple syrup, coconut oil, vanilla, and salt. Heat the mixture until it is completely melted and combined.
- Pour the mixture over the crust and then sprinkle the shredded coconut all over the top. Place in the refrigerator to set. After it is set, you can cut into 16 squares.
- Melt half of the dark chocolate in the microwave and stir until smooth. Take each square and dip the bottom into the melted chocolate and place on a lined baking sheet to set.
- Melt the rest of the chocolate in the microwave. Pour the chocolate into a ziplock bag and snip the corner off. Squeeze the bag to drizzle over all of the squares for decoration.
- Store in refrigerator or freezer and enjoy!
