Protein No-Bake Sugar Cookie Bars
These no-bake sugar cookie bars are high protein, vegan, paleo, gluten-free, dairy-free, and so so tasty!
Ingredients
- ½ cup cashew butter *see notes
- ¼ cup coconut oil melted
- 2 tablespoon maple syrup
- ⅔ cup +1 tablespoon almond flour
- ½ cup vanilla protein powder of choice **see notes
- splash of vanilla extract
- pinch of salt
- ¼ cup frosting of choice OPTIONAL I used a paleo frosting!
Instructions
- Line a loaf pan with parchment paper and set aside. In a large bowl, mix together the cashew butter, coconut oil, maple syrup, and vanilla extract until smooth.
- Mix in the dry ingredients until well combined and you have a thick dough. Press the dough into the prepared pan and place in the fridge to set for about 20 min.
- Slice into cookie bars and top with optional frosting and sprinkles. Enjoy!
Notes
*be sure to use a natural cashew butter as you need it to be runny in texture and not thick!
**you may need to use less protein powder and/or almond flour depending on your brand of protein powder and how absorbent it is! Start with less and add more until you get the texture you'd like.

These look amazing! Can I use natural peanut butter instead? Thanks!
