Paleo & Vegan Apple Pie Bars
These apple pie bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
For the Crust/Crumble:
- 2 cup almond flour
- 2 tablespoon coconut flour
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- pinch of salt
- ⅓ cup coconut oil melted
For the Apple Filling:
- 5 medium apples peeled and diced
- 2-3 tablespoon maple syrup adjust according to how sweet you like it
- 2 ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ tablespoon tapioca flour can sub arrowroot flour
- ¼ cup water
Instructions
- Preheat oven to 350℉ and line a 8x8 pan with parchment paper.
- In a bowl, mix together all crust/crumble ingredients until you have a dough. Press ⅔ of the dough into the prepared pan and bake for 10 minutes.
- While the dough is baking, begin making the filling. Add apples and water to a medium saucepan and cook over medium heat until the apples start to soften. Add in the rest of the ingredients and continue to cook for about 5-10 minutes or until you have a thick apple pie filling texture.
- Remove crust from the oven and add the apple pie filling evenly over top. Crumble the remaining ⅓ of dough evenly across the top of the filling and return to oven to bake for 18-20 minutes or until lightly golden. Let cool before slicing and enjoying!
