    Paleo & Vegan Blueberry Pop Tart

    I don't know about you all, but I absolutely loved Pop Tarts growing up! I have already made healthy alternatives for the Brown Sugar Cinnamon, Raspberry, & Chocolate Fudge flavors, so I had to make a blueberry version. This is made with super simple ingredients, and I promise you are going to absolutely love it. It is paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • coconut flour
    • coconut oil
    • vanilla extract
    • blueberry jam (homemade or storebought)
    • optional powdered sugar

    Storage

    Store in an airtight container for up to 3 days.

    Paleo & Vegan Blueberry Pop Tart

    This blueberry pop tart is paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    For the pastry dough:
    • 6 tablespoon almond flour
    • 1 tablespoon coconut flour
    • 4 teaspoon coconut oil melted
    • 4 teaspoon water
    • splash of vanilla extract
    For the filling:
    • 3-4 tablespoon blueberry jam of choice You can use homemade or storebought
    For the optional icing (not paleo!):
    • ⅓ cup powdered sugar
    • water to thin
    For a paleo icing:
    • 2 tablespoon coconut butter melted
    • 1 tablespoon maple syrup

    Method
     

    1. Preheat oven to 350℉ and line a baking sheet with parchment paper. In a bowl, mix all of the pastry dough ingredients until you have a dough.
    2. Split the dough in half and roll one half onto the parchment paper to create a rectangle. Spread your jam onto this piece of dough.
    3. Roll out the other half of the dough into the same size rectangle and add it on top of the other piece to cover the jam.
    4. Pinch the edges of the pop tart together using a fork. Bake for about 17-19 minutes. Let cool.
    5. Mix together your icing of choice and add to the pop tart. Enjoy!
