    These funfetti sugar cookie bars are gluten-free, dairy-free, and full of fun! I'm a firm believer that sprinkles make everything more fun. These cookie bars are perfect for any celebration or just celebrating the everyday life!

    Ingredients

    Here are the ingredients you'll need:

    • gluten-free flour
    • granulated sugar
    • vanilla
    • egg
    • nondairy butter or ghee
    • baking powder
    • sprinkles
    • powdered sugar
    • nondairy milk

    Storage

    Store these in the fridge for up to 5 days then transfer to freezer.

    Ingredients Method

    Ingredients
      

    For the cookie base:
    • 1 ½ cup gluten free flour
    • ¼ +⅛ teaspoon xanthum gum only if your flour does not already have it!
    • ⅔ cup sugar
    • 2 teaspoon vanilla extract
    • 1 egg
    • ½ cup nondairy butter can substitute ghee if you'd like
    • ½ teaspoon salt
    • ¼ teaspoon baking powder
    • ½ cup sprinkles
    For the frosting:
    • ½ cup nondairy butter
    • 2 cups powdered sugar
    • ½ teaspoon vanilla extract
    • 1-2 tablespoon nondairy milk as needed, to thin

    Method
     

    1. Preheat oven to 375°F and line an 8x8 baking pan with parchment paper. Cream together the butter and sugar. Mix in the egg and vanilla until combined.
    2. Add in all dry ingredients until well combined. Fold in the sprinkles.
    3. Press the dough into the prepared pan and bake for about 14-16 min. (this will vary based on your oven as well as how gooey you want them! I bake for 14 minutes.) Let cool while you make the frosting.
    4. Whisk the butter until whipped. Mix in the powdered sugar ½ cup at a time until you get your desired consistency. Add in the vanilla. Add your milk if the frosting is too thick for your liking.
    5. Spread frosting evenly onto the cookie base, slice, and enjoy!

      LOVED this recipe. SO EASY any turned out phenomenal. Only issue was I needed to bake this at least twice as long as listed for it not to be basically raw. I recommend checking into that timing again just in case! I think I was closer to 25 minutes and it was still that soft and chewy cookie. My GF DF boyfriend was over the moon!

        Hi Alyssa! I am SO happy you tried them and liked them! The bake time will vary depending on which GF flour you use and your oven. I'll be sure to make a note of that:)

          These look so good! Is there anything else you can use to sweeten them apart from refined sugar? Could you use coconut sugar perhaps?

      We LOVE this recipe! My husband is dairy free and gluten free, and it can be so hard to find good recipes for him where he doesn’t feel like he’s missing out. We made this and, holy moly, are they good. He’s a principal and brought a batch to school for a potluck, and now all of the staff request these for every potluck. In fact, I’m getting ready to make two batches for a staff member and her family as part of a meal train— they didn’t care what we did for dinner for them but they specifically requested these. They’re so yummy.

      I made them into cookies instead of bars. We didn’t add the frosting either. We LOVED this recipe for cookies as well.
