- non-dairy butter
- sugar
- honey
- egg
- gluten-free flour
- baking soda
- sea salt

Gluten-free & Dairy-free Honey Pistachio Cookies
These honey pistachio cookies are gluten-free, dairy-free, simple to make, and so delicious!
Ingredients
Method
- Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
- In a bowl, mix together the egg, melted butter, honey, vanilla, and sugar until smooth.
- Mix in the flour, baking soda, and salt until you have a dough. Fold in the chocolate chips.
- Scoop the dough into large cookies, about 2 tablespoon in size. Place on the prepared baking sheets and bake for about 10-13 minutes. I only bake mine for 10 minutes to keep them super soft!
- Drizzle the cookies with honey and sprinkle some more pistachios over top. Enjoy!

Hello,
I would love to make these and wanted to know if I can only use honey in cookies or sugar? I mostly bake with honey and try to limit refined sugar as much as possible. Would the cookies still bake if I only use 1/3 cup honey and no sugar or just use sugar? I don't want to use both honey and the sugar. Please let me know if this would work.

Do these have chocolate chips in them? It's listed in the instructions but not the ingredients nor do I notice it in any of the pictures.

Take out the words chocolate chips and replace it with pistachios in instructions #3.
That is where you add in the pistachios.
