    Servings: 12 cookies
    Course: cookie, Dessert, Snack
    Cuisine: American
    Ingredients Method

    Ingredients

    • 1 egg
    • ⅓ cup + 1 teaspoon honey
    • splash of vanilla extract
    • 1 cup non-dairy butter melted
    • ⅓ cup sugar
    • 2 cup gluten-free flour
    • ¼ teaspoon baking soda
    • pinch of salt
    • ¾ cup pistachios chopped
    • extra honey and pistachios for topping!

    Method

    1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
    2. In a bowl, mix together the egg, melted butter, honey, vanilla, and sugar until smooth.
    3. Mix in the flour, baking soda, and salt until you have a dough. Fold in the chocolate chips.
    4. Scoop the dough into large cookies, about 2 tablespoon in size. Place on the prepared baking sheets and bake for about 10-13 minutes. I only bake mine for 10 minutes to keep them super soft!
    5. Drizzle the cookies with honey and sprinkle some more pistachios over top. Enjoy!

      Hello,

I would love to make these and wanted to know if I can only use honey in cookies or sugar? I mostly bake with honey and try to limit refined sugar as much as possible. Would the cookies still bake if I only use 1/3 cup honey and no sugar or just use sugar? I don't want to use both honey and the sugar. Please let me know if this would work.

      Thanks!

What gluten free flour do you? Is it a blend? Almond flour?

Could I use maple syrup instead of honey?

Hi Rachelle! I would assume this might work but I haven't tried it myself to guarantee.

Hello I was interested in making this recipe. I have all the ingredients except dairy free butter, would I be able to use regular butter as a substitute?

Do these have chocolate chips in them? It's listed in the instructions but not the ingredients nor do I notice it in any of the pictures.

It also doesn’t ever mention when to add the pistachios in the dough
