Gluten-free & Dairy-free Honey Pistachio Cookies
These honey pistachio cookies are gluten-free, dairy-free, simple to make, and so delicious!
Ingredients
Method
- Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
- In a bowl, mix together the egg, melted butter, honey, vanilla, and sugar until smooth.
- Mix in the flour, baking soda, and salt until you have a dough. Fold in the chocolate chips.
- Scoop the dough into large cookies, about 2 tablespoon in size. Place on the prepared baking sheets and bake for about 10-13 minutes. I only bake mine for 10 minutes to keep them super soft!
- Drizzle the cookies with honey and sprinkle some more pistachios over top. Enjoy!

Hello,
I would love to make these and wanted to know if I can only use honey in cookies or sugar? I mostly bake with honey and try to limit refined sugar as much as possible. Would the cookies still bake if I only use 1/3 cup honey and no sugar or just use sugar? I don't want to use both honey and the sugar. Please let me know if this would work.
Thanks!

What gluten free flour do you? Is it a blend? Almond flour?

I want to mention I have egg aergy would it be okay to substitute egg for 1/4th cup applesauce? Thanks!

Could I use maple syrup instead of honey?
Sami Smith
Hi Rachelle! I would assume this might work but I haven't tried it myself to guarantee.

Hello I was interested in making this recipe. I have all the ingredients except dairy free butter, would I be able to use regular butter as a substitute?
Denise
Do these have chocolate chips in them? It's listed in the instructions but not the ingredients nor do I notice it in any of the pictures.
Michelle
It also doesn’t ever mention when to add the pistachios in the dough
