I've been entering my gluten-free sourdough era, so I've had a lot of sourdough discard that I needed to put to use! I decided to make a banana bread because who doesn't love banana bread?! It's honestly so simple to make, gluten-free, dairy-free, and absolutely delicious!

Ingredients
Here are the ingredients you'll need:
- gluten-free sourdough discard
- gluten-free flour
- eggs
- avocado oil
- baking powder and soda
- vanilla extract
- brown sugar or coconut sugar
- non-dairy chocolate chips
- ripe bananas

Gluten-free & Dairy-free Sourdough Banana Bread
This sourdough banana bread is gluten-free, dairy-free, and absolutely delicious!
Ingredients
- 3 ripe bananas mashed
- 2 eggs
- ½ cup gluten-free sourdough discard
- ½ cup avocado oil
- 1 teaspoon vanilla extract
- ½ cup brown sugar can sub coconut sugar
- 2 cup gluten-free flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- pinch of salt
- ½ cup non-dairy chocolate chips
Instructions
- Preheat oven to 350℉ and line a loaf pan with parchment paper.
- In a bowl, mix together the bananas, eggs, avocado oil, vanilla extract, sugar, and sourdough discard until smooth.
- Mix in the flour, baking soda, baking powder, and salt until well combined. Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and bake in the oven for 30 minutes. Remove from the oven and cover with tin foil before returning to the oven for another 20-25 minutes, or until a toothpick comes out clean. Let cool completely before slicing and enjoying!
