Lemon Poppy Seed Bites
These lemon poppy seed bites are the perfect tangy Spring bites! They're paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so so tasty!
Ingredients
- 1 cup almond flour
- 7 tablespoon lemon juice *see notes
- 2 tablespoon honey sub maple syrup for vegan
- 1 teaspoon lemon zest
- ½ tablespoon poppy seeds
- 5 tablespoon water
- ¼ cup coconut flour
Instructions
- Line a baking sheet with parchment paper. In a bowl, mix all ingredients until well combined and you have a dough.
- Roll the dough into bite-sized balls and place on baking sheet. Place in fridge to firm up for about an hour. Enjoy!
Notes
*sub some of the lemon juice with water or honey/maple syrup if it is too sour for you! I recommend tasting as you go!
