These strawberry crumble bars might just be one of my favorite sweet treats I've made yet! They are the perfect combination of flavors and only a subtle sweetness from the strawberries and maple syrup. These bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

- coconut flour
- almond flour
- maple syrup
- coconut oil
- tapioca flour
- vanilla extract

Paleo & Vegan Strawberry Crumble Bars
These strawberry crumble bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
For the crust & crumble:
- 2 cup almond flour
- 2 tablespoon coconut flour
- ¼ cup maple syrup
- pinch of salt
- 1 teaspoon vanilla extract
- ⅓ cup coconut oil melted
For the strawberry filling:
- 2 cup strawberries fresh or frozen
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- pinch of salt
- 1 ½ tablespoon tapioca flour or arrowroot flour
Instructions
- Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a bowl, mix together the crust ingredients until you have a dough.
- Press ⅔ of the dough into the prepared pan, saving ⅓ for topping, and bake for 10 min.
- In a medium saucepan, add your strawberries and cook over medium-low heat until you can begin to mash them.
- Add the rest of the filling ingredients and continue cooking until you have a thick jam filling.
- Spread the filling over the baked crust, add the rest of the crust crumbled over top, and return to oven to bake for another 20-22 min. Let cool completely before slicing and enjoying!
