    These berry muffins are fluffy and full of delicious flavor! They're paleo, gluten-free, dairy-free, fluffy, and delicious. I love making these for a quick breakfast or snack during the day!

    Ingredients

    Here are the ingredients you'll need:

    • unsweetened applesauce
    • nondairy milk
    • eggs
    • vanilla
    • maple syrup
    • coconut sugar
    • cassava flour
    • baking soda & powder
    • blackberries
    • strawberries
    • lemon juice

    Store at room temp. or in the fridge for up to 5 days.

    Paleo Berry Muffins

    These berry muffins are paleo, gluten-free, dairy-free, and oh so delicious!

    Servings 12 muffins

    Ingredients
      

    • ¾ cup unsweetened applesauce
    • ½ cup nondairy milk
    • ½ tablespoon lemon juice
    • 3 eggs
    • 2 teaspoon vanilla extract
    • ¼ cup maple syrup
    • 1 ¾ cup cassava flour
    • ½ teaspoon baking soda
    • 1 teaspoon baking powder
    • pinch of salt
    • ½ cup blackberries chopped in halves
    • ½ cup strawberries chopped

    Instructions
     

    • Preheat oven to 350°F and line a muffin tin with cupcake liners. Mix all ingredients, except for the berries, until well combined. Fold in the berries.
    • Pour the batter into the muffin liners and bake for about 22 min. Let cool and enjoy!
