- unsweetened applesauce
- nondairy milk
- eggs
- vanilla
- maple syrup
- coconut sugar
- cassava flour
- baking soda & powder
- blackberries
- strawberries
- lemon juice

Paleo Berry Muffins
These berry muffins are paleo, gluten-free, dairy-free, and oh so delicious!
Ingredients
- ¾ cup unsweetened applesauce
- ½ cup nondairy milk
- ½ tablespoon lemon juice
- 3 eggs
- 2 teaspoon vanilla extract
- ¼ cup maple syrup
- 1 ¾ cup cassava flour
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- ½ cup blackberries chopped in halves
- ½ cup strawberries chopped
Instructions
- Preheat oven to 350°F and line a muffin tin with cupcake liners. Mix all ingredients, except for the berries, until well combined. Fold in the berries.
- Pour the batter into the muffin liners and bake for about 22 min. Let cool and enjoy!
