I know I'm not the only one who loves to wake up on the weekend to the scent of some fluffy cinnamon rolls in the oven, right? Well, I decided to make them in a cookie form to enjoy that magical taste for dessert, a snack, or even breakfast! These are super easy to make, made with clean ingredients, and are the perfect meal prep item for the week ahead!
Paleo Cinnamon Roll Cookies
These paleo cinnamon roll cookies mimic the delicious taste of a fresh baked cinnamon roll, but in cookie form! Made with gluten-free, grain-free, dairy-free, and clean ingredients. These make the perfect cookie to have on hand all week!
Ingredients
For the Dough:
- 1 ½ Cup Almond flour
- 1 tablespoon Coconut flour
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- 1 Egg
- 2 tablespoon Coconut oil melted
- 1 tablespoon Honey can sub maple syrup
For the Filling:
- 2 tablespoon Cinnamon
- 2 tablespoon Honey or maple syrup
For the Glaze:
- 2 tablespoon Honey or maple syrup
- 3 tablespoon Coconut cream
- 1 teaspoon Cinnamon
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a bowl, mix the wet ingredients for the dough and then slowly incorporate the dry until you have a dough form.
- Lay the dough on a piece of wax paper and begin rolling it out into a rectangle (I placed another sheet of wax paper on top to prevent sticking to the rolling pin!).
- Once the dough is rolled out, drizzle the dough with the honey and follow by sprinkling with cinnamon.
- With the help of the wax peper, gently roll up the dough into a log shape and place in the freezer for about 10-20 min.
- Remove from the freezer and slice into 10-11 cookies (I like to use floss for a more precise cut!) and place on baking sheet. Bake for about 10 min until just golden. Remove from the oven to cool.
- For the glaze, whisk together the sweetener and coconut cream and then spread over the cookies. Enjoy!
