    Paleo Soft Gingerbread Cookies

    These gingerbread cookies are so soft and dreamy! They are the perfect sweet treat for the holiday season. These gingerbread cookies are paleo, gluten-free, dairy-free, simple to make, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • molasses
    • coconut oil
    • coconut sugar or regular sugar
    • eggs
    • coconut flour
    • ginger, cinnamon, nutmeg, cloves

    Store in the fridge or freezer!

    Be sure not to overbake these so that they are soft!

    Ingredients Method

    Ingredients
      

    • 2 eggs
    • 4 tablespoon molasses
    • ½ cup coconut sugar can sub regular sugar if not paleo
    • ½ cup coconut oil melted
    • 2 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • 2 teaspoon ginger
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • ¼ teaspoon cloves
    • 2 cup almond flour
    • ⅔ cup coconut flour
    • extra coconut sugar or regular sugar for rolling

    Method
     

    1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper. In a bowl, combine all of your ingredients until you have a smooth dough.
    2. Begin rolling the dough into balls. Roll each cookie dough ball in sugar (coconut sugar for paleo) and place on prepared baking sheets.
    3. I like to use the bottom of a cup to lightly flatten the cookies. Bake for about 8-10 minutes and let cool. I like to dip mine in some dairy-free white chocolate! Enjoy!
