    Gluten-free & Dairy-free Iced Banana Bread Cookies

    I have a chocolate chip banana bread cookie recipe that is a favorite, so I thought I'd change it up and make an iced banana bread version! These are so perfectly soft and remind me of all the goodness of both banana bread and cookies in one. These banana bread cookies are gluten-free, dairy-free, simple to make, and oh so tasty!

    Ingredients

    Here are the ingredients you'll need:

    • ripe banana
    • egg
    • non-dairy butter
    • sugar
    • brown sugar
    • gluten-free flour
    • baking soda & powder
    • cinnamon
    • powdered sugar

    Ingredients Method

    Ingredients
      

    • 1 egg yolk
    • ⅓ cup mashed banana
    • ½ cup non-dairy butter melted
    • ½ cup sugar
    • ⅓ cup brown sugar
    • 1 ¾ cup gluten-free flour
    • ½ teaspoon baking soda
    • ¼ teaspoon baking powder
    • ½ teaspoon cinnamon
    • 1 teaspoon vanilla extract
    • pinch of salt
    For the icing:
    • ½ cup powdered sugar
    • water to thin

    Method
     

    1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
    2. In a bowl, whisk togethert the melted butter, banana, sugars, egg yolk, and vanilla until smooth.
    3. Mix in the dry ingredients until you have a dough. Scoop the dough into about 10 large cookies and place on the prepared baking sheets.
    4. Bake for about 9-10 minutes. I like to underbake mine so that they are extra soft! Let them cool while you mix up the icing.
    5. Drizzle the icing over the cookies and enjoy!
