    Paleo & Vegan No-Bake Brownies

    These no-bake brownies are fudgy, gooey heaven! They are so rich and chocolate-y, so if you love chocolate, these are definitely for you. Not only are they no-bake and so simple to make, but they're also paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • dates
    • almond butter
    • cacao powder
    • coconut cream
    • non-dairy chocolate chips

    Paleo & Vegan No-bake Brownies

    These no-bake brownies are so fudgy, paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients Method

    Ingredients
      

    For the brownie base:
    • 1 ⅓ cup dates (about 15 dates) soaked in hot water for about 10 minutes
    • ¼ cup +2 tablespoon cacao powder unsweetened
    • 3 tablespoon almond butter smooth, natural
    • water as needed
    For the fudgy frosting:
    • ⅓ cup coconut cream
    • ⅔ cup non-dairy chocolate chips

    Method
     

    1. Line a loaf pan with parchment paper and set aside. In a food processor, add the softened dates and almond butter and blend. Add water as needed until you have a gooey mixture.
    2. Add in the cacao and blend until smooth. This mixture will be sticky!
    3. Press the sticky mixture into the prepared loaf pan and place in the freezer to set for about an hour.
    4. In a bowl, melt together the chocolate chips and coconut cream until smooth. Spread this over top of the frozen date base and let set in the fridge for about 30 minutes. Slice and enjoy! I store these in the freezer.
