    Paleo & Vegan Samoa Truffles

    These chocolate Samoa truffles are simply a dream! If you love the flavors of the classic Samoa Girl Scout cookies, you are going to love these bites. They're made with simple ingredients and so tasty. These Samoa truffles are paleo, vegan, gluten-free, dairy-free, refined sugar-free, no-bake, and oh so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • dates
    • almond butter
    • shredded coconut, unsweetened
    • non-dairy chocolate chips
    • coconut oil

    Paleo & Vegan Samoa Truffles

    These Samoa truffles are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients Method

    Ingredients
      

    • 1 cup pitted dates soaked in hot water for 10 minutes to soften!
    • ¾ cup shredded coconut unsweetened
    • 1 ½ tablespoon smooth almond butter natural
    • ½ cup non-dairy chocolate chips
    • 1 teaspoon coconut oil

    Method
     

    1. Line a baking sheet with parchment paper and set aside.
    2. In a food processor, add the dates and almond butter. Blend until you have a sticky mixture.
    3. Add in the shredded coconut and blend again until you have a sticky dough.
    4. Begin rolling the dough into balls about 1-2 tablespoon in size and place on the prepared baking sheet. Place in the freezer to set for about one hour.
    5. In a bowl, melt together the chocolate chips and coconut oil until smooth. Dip each of the truffles in the chocolate until completely coated and return to baking sheet to set. Enjoy!
