    Paleo & Vegan Thumbprint Cookies

    I don't know about you all, but I loveeeee a fruity thumbprint cookie! You can make these using any jam/jelly of choice. I've made them with strawberry jam, raspberry jam, blueberry jam, and all were so delish. They're made with super simple ingredients and are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so tasty!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • maple syrup
    • coconut oil
    • vanilla extract
    • jam/jelly of choice

    Storage

    Store in an airtight container for up to 5 days!

    Paleo & Vegan Thumbprint Cookies

    These thumbprint cookies are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients
      

    • 2 cup almond flour
    • ¼ cup maple syrup
    • ¼ cup coconut oil melted
    • ¼ teaspoon baking powder
    • 1 teaspoon vanilla extract
    • ¼ teaspoon almond extract optional
    • ½ cup raspberry jam of choice can use any homemade or storebought jam you'd like!

    For a paleo icing drizzle:

    • ¼ cup coconut butter melted
    • 1 tablespoon maple syrup

    For a non-paleo icing drizzle:

    • ⅓ cup powdered sugar
    • 1-2 teaspoon water to thin

    Instructions
     

    • Preheat oven to 350℉ and line a baking sheet with parchment paper.
    • In a bowl, combine all ingredients except for the jam. Mix until you have a cookie dough.
    • Begin scooping the dough into balls about 1 ½ tablespoon in size. Lightly flatten on the prepared baking sheet, indenting more into the middle to allow for the addition of jam after baking.
    • Bake for 10-12 minutes and let cool. Once the cookies are cool, spoon your jam into the center of each cookie. Mix up your icing drizzle of choice and drizzle over top of the cookies. Enjoy!
