    These chocolate coconut cookie bars are my simpler take on the classic magic cookie bars! They are made with a lot simpler and healthier ingredients. I use the Nature's Charm Sweetened Condensed Coconut Milk in these. These cookie bars are vegan, gluten-free, dairy-free, and so delicious!

    These are such a yummy holiday dessert recipe option! I'd pair these with my gingerbread cookie bar recipe and brown sugar pop tart squares.

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • coconut flour
    • maple syrup
    • coconut oil
    • non-dairy chocolate chips
    • unsweetened shredded coconut
    • sweetened condensed coconut milk

    Store in the fridge or freezer!

    Top tip

    I love keeping these in the freezer and letting them thaw for about 10 minutes before eating - they're so good cold!

    What sweetened condensed coconut milk do you recommend?

    I always use Nature's Charm sweetened condensed coconut milk. It works as a perfect substitute to dairy sweetened condensed milk.

    How should I store these?

    If storing them in the fridge, they will last up to 3 days. Or you can store them in the freezer!

    These chocolate coconut cookie bars are vegan, gluten-free, dairy-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    Cookie Base:
    • 2 cup almond flour
    • 2 tablespoon coconut flour
    • ¼ cup maple syrup
    • ⅓ cup coconut oil melted
    Filling:
    • 1 cup non-dairy chocolate chips
    • ¾ cup shredded coconut unsweetened
    • ¼ cup sweetened condensed coconut milk

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a bowl, mix together the cookie base ingredients until you have a dough. Press this evenly into the prepared pan.
    3. Sprinkle your chocolate chips over the cookie layer, followed by the shredded coconut. Pour the sweetened condensed coconut milk evenly over top.
    4. Bake for about 18-20 minutes. Let the bars cool completely for at least 30 minutes before placing in the fridge to set for another 30 minutes. Once they are set, you can slice and enjoy!
