- vanilla protein powder
- cinnamon
- coconut oil
- almond flour
- maple syrup

Storage

Vegan & Gluten-free Cinnamon Roll Protein Bars
These cinnamon roll protein bars are vegan, gluten-free, dairy-free, refined sugar free, and delicious!
Ingredients
- ½ cup smooth almond butter
- ½ cup vegan vanilla protein powder
- 2 teaspoon cinnamon
- 2 tablespoon coconut oil melted
- ⅔ cup almond flour
- ¼ cup maple syrup
For the optional drizzle (not paleo!):
- ¼ cup powdered sugar
- 1-2 teaspoon water
For a paleo drizzle:
- ¼ cup melted coconut butter
- 1 teaspoon maple syrup
Instructions
- Line an 8x8 pan with parchment paper. In a bowl, mix together all ingredients and press into prepared pan. Place in fridge for about an hour to firm up.
- Slice into bars. Mix together the icing drizzle. Drizzle over the bars and enjoy!
Notes
For a paleo and refined sugar free version, omit the icing drizzle or use ¼ cup melted coconut butter mixed with 2 tablespoon maple syrup!

Hey! Just tried making this and they came out super crumbly and barely lined the 8x8 before putting them in the fridge. Will the firm up pretty well once they cool down? Love your recipes!!

Hi Jes! Hmm, mine have never come out crumbly when I make them. I would add more nut butter to see if that helps! Was your nut butter a natural nut butter that is runny in texture?

Hello, I have the same problem, mine dough was too crumbly and powdery, I used homemade ( runny) almond butter. The tastw was amazing but the texture... then I added water to the dough and made little balls 😀 maybe the measurments are different?

Hi Natalia! I'm thinking it might be the type/brand of protein powder you used. Different protein powders absorb different amounts of moisture. I'm glad you were still able to enjoy them!:)
