- baking powder
- honey or maple syrup
- vegan marshmallow fluff

Vegan & Gluten-free Fluffernutter Cookies
These fluffernutter cookies are vegan, gluten-free, dairy-free, and the perfect peanut butter and marshmallow combo!
Ingredients
- ½ cup smooth peanut butter
- ⅔ cup almond flour
- ½ teaspoon baking powder
- ¼ cup honey sub maple syrup for vegan
- ¼ cup marshmallow fluff ensure it is vegan if strictly vegan!
Instructions
- Preheat oven to 350°F and line 2 baking sheets with parchment paper.
- In a large bowl, mix together all ingredients, except for the marshmallow fluff, until you have a dough.
- Scoop into about ½ tablespoon sized balls and flatten using a fork. Bake for about 8 min. Let cool.
- Once the cookies are cool, sandwich 2 cookies together using the marshmallow fluff. You can allow these to firm up in the fridge or enjoy as is!
