These no-bake cookie dough bars are simply a DREAM! I don't know about you all, but I absolutely loveeee cookie dough. These high protein cookie dough bars are made with healthy ingredients, are vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

Ingredients
Here are the ingredients you'll need:
- chickpeas, rinsed and drained
- almond butter
- coconut flour
- almond flour
- sugar substitute of choice (I used monkfruit)
- almond milk
- non-dairy chocolate chips

Storage
Store in the freezer, as they are very soft at room temp!
Vegan & Gluten-free Protein Cookie Dough Bars
These high protein cookie dough bars are vegan, gluten-free, dairy-free, refined sugar-free, simple to make, and so delicious!
Ingredients
Method
- Line a loaf pan with parchment paper and set aside.
- In a food processor, blend together the chickpeas, almond butter, vanilla, and sugar until you have a smooth sticky dough.
- Move this dough to a bowl and mix in the almond flour and coconut flour until well combined. Fold in the chocolate chips. Press the dough into your prepared pan and place in the freezer to set for about 30 minutes.
- Remove from freezer, slice, and enjoy!
