This pop tart is for all of my s'mores lovers out there! This brings alllll the nostalgia of a classic pop tart but with healthier ingredients. I love how simple this is to make and it packs all of the yummy s'mores flavor. This is vegan, gluten-free, dairy-free, easy to make, and so delicious!
Ingredients
Here are the ingredients you'll need:
- almond flour
- coconut flour
- coconut oil
- molasses
- cinnamon
- marshmallow fluff (use a vegan marshmallow fluff if strictly vegan)
- non-dairy chocolate chips

Vegan & Gluten-free S'more Pop Tart
This s'mores pop tart is vegan, gluten-free, dairy-free, simple to make, and so delicious!
Ingredients
For the pastry dough:
- 6 tablespoon almond flour
- 1 tablespoon coconut flour
- 4 teaspoon coconut oil melted
- 3 teaspoon water
- 1 teaspoon molasses
- sprinkle of cinnamon
For the filling:
- 3 tablespoon marshmallow fluff be sure to use a vegan version if strictly vegan!
- 3 tablespoon non-dairy chocolate chips
For the icing:
- ¼ cup powdered sugar
- ½ tablespoon cacao powder
- water to thin
Instructions
- Preheat oven to 350℉ and line a baking sheet with parchment paper.
- In a bowl, mix together the pastry dough ingredients until you have a dough.
- Split the dough in half and roll one half onto the parchment paper to create a rectangle. Spread your marshmallow fluff on top of the rectangle and sprinkle your chocolate chips evenly over top. Roll out the other half of the dough into the same size rectangle and place it on top of the filling.
- Pinch the edges together using a fork. Bake for 17-19 minutes. Let cool.
- Mix together your icing and add to the pop tart. Enjoy!

Is it possible to use regular gluten free flour instead of almond flour?
