    Vegan & Gluten-free Strawberry Cheesecake Bars

    These strawberry cheesecake bars are a cheesecake lovers' dream! They taste just like the real deal cheesecake but are dairy-free. I am a cheesecake lover through and through and these are one of my new favorite recipes. These bars are vegan, gluten-free, dairy-free, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • dairy-free cream cheese
    • dairy-free butter
    • gluten-free golden oreos
    • coconut cream
    • vanilla extract
    • fresh strawberries
    • sugar

    Storage

    Store in the freezer and thaw for 30 minutes in the fridge before enjoying!

    Vegan & Gluten-free Strawberry Cheesecake Bars

    These strawberry cheesecake bars are vegan, gluten-free, dairy-free, and absolutely delicious!

    Ingredients
      

    For the crust:

    • 22 gluten-free Golden Oreos
    • 4 tablespoon non-dairy butter melted

    For the strawberry cheesecake filling:

    • 16 oz. non-dairy cream cheese I love the Kite Hill brand!
    • ½ cup +2 tablespoon coconut cream
    • 1 teaspoon vanilla extract
    • 1 cup fresh strawberries
    • ¾ cup sugar can use a sugar substitute!

    Instructions
     

    • Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    • In a food processor, grind the oreos until they are finely ground. Add in the melted vegan butter and combine. Press this mixture into your prepared pan and set aside.
    • In a blender, blend the filling ingredients until smooth. Pour this filling on top of the crust.
    • Bake for about 37-39 minutes. Let cool completely in the fridge for at least 4 hours. Slice and enjoy! These will be pretty gooey at room temperature; I like to store mine in the freezer and thaw in the refrigerator before enjoying.
