    These are a delicious thick and soft chocolate chip cookie recipe to have on hand at all times! I just moved into my own apartment and love to have sweet treats on hand at all times for not only myself, but to give others. I wanted to make a gluten-free cookie recipe with simple ingredients, and these are just that. These cookies are gluten-free, dairy-free, simple to make, and so tasty!

    I love to make these any time of year and whenever I am craving a delicious cookie! I like to pair a batch of these with my brown sugar pop tart bars or my blueberry crumble bars.

    Ingredients

    Here are the ingredients you'll need:

    • egg
    • gluten-free flour
    • brown sugar or coconut sugar
    • maple syrup
    • non-dairy butter
    • vanilla extract
    • non-dairy chocolate chips
    • baking soda

    Top tip

    I like to slightly underbake these so that the inside is nice and soft!

    Ingredients Method

    Ingredients
      

    • ⅓ cup non-dairy butter melted
    • 1 egg
    • 1 teaspoon vanilla extract
    • ⅓ cup brown sugar or coconut sugar
    • ¼ cup maple syrup
    • ½ teaspoon baking soda
    • 1 ½ cup gluten-free flour
    • 12 cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line a baking sheet with parchment paper.
    2. In a bowl, whisk together the melted butter, egg, sugar, maple syrup, and vanilla until smooth.
    3. Mix in the dry ingredients until you have a dough. Fold in the chocolate chips.
    4. Scoop into cookies about 1 ½ tsbp in size and place on prepared baking sheet. Lightly flatten the cookies and bake for just about 10 minutes. Let them cool for another 10 minutes on the baking sheet before transferring to a wire rack to cool fully. Enjoy!
