I just moved into my own apartment and love to have sweet treats on hand at all times for not only myself, but to give others. I wanted to make a gluten-free cookie recipe with simple ingredients, and these are just that. These cookies are gluten-free, dairy-free, simple to make, and so tasty!

I love to make these any time of year and whenever I am craving a delicious cookie! I like to pair a batch of these with my brown sugar pop tart bars or my blueberry crumble bars.

- egg
- gluten-free flour
- brown sugar or coconut sugar
- maple syrup
- non-dairy butter
- vanilla extract
- non-dairy chocolate chips
- baking soda

Method
- Preheat oven to 350℉ and line a baking sheet with parchment paper.
- In a bowl, whisk together the melted butter, egg, sugar, maple syrup, and vanilla until smooth.
- Mix in the dry ingredients until you have a dough. Fold in the chocolate chips.
- Scoop into cookies about 1 ½ tsbp in size and place on prepared baking sheet. Lightly flatten the cookies and bake for just about 10 minutes. Let them cool for another 10 minutes on the baking sheet before transferring to a wire rack to cool fully. Enjoy!
