    Gluten-free & Dairy-free Espresso Brownies

    These fudgy espresso brownies are perfect for all of my chocolate & coffee lovers out there! The texture on these is so soft and the chocolate pairs perfectly with the coffee flavor. These espresso brownies are gluten-free, dairy-free, simple to make, and so delicious!

    I love to pair these with a batch of my soft sugar cookie bars and paleo funfetti donut holes!

    Ingredients

    Here are the ingredients you'll need:

    • eggs
    • maple syrup
    • coconut milk
    • espresso powder
    • cacao powder
    • gluten-free flour
    • non-dairy chocolate chips
    • almond flour

    These fudgy espresso brownies are gluten-free, dairy-free, simple to make, and so delicious!

    Ingredients Method

    Ingredients
      

    • ½ cup full-fat coconut milk
    • 2 eggs
    • ⅓ cup maple syrup
    • ¼ cup cacao powder unsweetened
    • ½ cup non-dairy chocolate chips melted
    • 1 ½ teaspoon espresso powder
    • pinch of salt
    • splash of vanilla extract
    • ½ cup almond flour
    • ¼ cup gluten-free flour

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper and set aside.
    2. In a bowl, combine all of the wet ingredients until smooth.
    3. Mix in the dry ingredients until you have a smooth batter. Fold in some extra chocolate chips if you'd like and spread batter into the prepared pan.
    4. Bake for 18-20 minutes and let cool completely before slicing and enjoying!
